“Here at Wolfgang Puck Bar & Grill in the MGM Grand, Las Vegas, we fresh squeeze all of our juices on a daily basis. We’re always trying to elevate our bar program and that begins with using the best ingredients for our cocktails. The flavor profile that fresh squeezed juice brings to our drink is unmatched. As well, we dehydrate and candy the various citrus as garnish for our drinks.”

Lemonade Is On Trend, & In Demand
Zest up your menu with a twist on lemonade, the refreshing beverage that continues to hit home with consumers. Gourmet lemonade is the leading non-alcoholic beverage trend, according to the National Restaurant Association (NRA)’s 2015 Culinary Forecast.
“Grilling citrus takes the bright fresh, taste of the fruit and richens it with deep, smoky flavors. At Shari’s we serve Fish and Chips with a grilled lemon garnish that truly elevates the dish.”
– Kevin Bechtel, SVP/Corporate Chef, Shari’s Café and PieCheers to Grapefruit
Thanks to its refreshing, tangy flavor, grapefruit is growing on cocktail menus, up 77% this year according to Technomic.
“I love to use fresh citrus throughout the year. Whether it’s lemons, oranges or limes, citrus can brighten and add liveliness to a heavier dish or add a complimentary note to a symphony of flavors. I can’t think of any dish that couldn’t benefit from a little citrus.”

Storage & Handling
Fresh Oranges, Lemons, and Seasonal Specialties.
Little compares to fresh citrus in a recipe, and there are a variety of ways to increase its shelf-life. Before preparation, store citrus in a cool, well-ventilated area. To maintain air circulation, keep cartons off the floor by placing them on pallets or racks. The U.S. Department of Agriculture recommends that produce be rinsed before eating or preparation. Detergent should not be used as it is not labeled for food use.
The best temperature range for citrus storage is 45° to 48° F. For specific temperature range by citrus variety, use the following guide:
- Oranges45-48˚F
- Lemon, Meyer Lemon45-48˚F
- Lime, Key Lime45-50˚F
- Grapefruit (Western Varieties)40-45˚F
- Oro Blanco/Sweeties/Melo Gold41˚F
- Pummelo41˚F
- Blood Orange37˚F
- Tangerine, Tangelo, Moro and Mandarin37˚F
