Meyer Lemon Olive Oil Cake

  • 3 eggs
  • 2 cups granulated sugar
  • 12 ounces extra virgin olive oil
  • 10 ounces milk
  • 1 teaspoon pure lemon oil
  • 2 ounces freshly squeezed Meyer lemon juice
  • 1 tablespoon Meyer lemon zest
  • 2 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 1 teaspoon salt
Directions
  1. Scale all the dry ingredients, place them in a mixing bowl. Then add all the wet onto the dry on speed one, using a whisk.
  2. Mix everything well for about 3 minutes.
  3. Pour the batter in a cake pan, bake at 300 degree for 50-65 minutes until done.
