Sunkist Orange Mojito
Serve this refreshing, summer-inspired cocktail all year long. Inspired by the traditional Cuban Mojito and created by Chef Allen Susser.
Serves 4
3 teaspoons sugar
6-7 whole mint leaves
½ lime cut in wedges
6 ounces light rum
6 ounces fresh-squeezed orange juice
4 handfuls crushed ice
6 ounces club soda
4 Orange slices
To prepare: In a large pitcher, combine the sugar and mint leaves. Using a bar mallet, crush the mint into the sugar. Pour in the rum

and orange juice, mixing well. Fill tall glasses with crushed ice and pour the Mojito over the ice. Finish with a splash of club soda and stir lightly. Garnish with orange slice.
